<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">1/2 tsp. thyme, 1 bay leaf in garni bag</span></li>

<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">1/2 C red wine</span></li>
<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">2 qt. Swanson beef stock</span></li>
<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">2 soup bones</span></li>
<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">salt and pepper to taste</span></li>
<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">1/2 " thick slices of French Baguette, toasted.</span></li>
<li class="ingredient" style="padding-left: 16px; text-indent: -16px;"><span style="font-family: Georgia, Times New Roman, serif;">2 C Gruyere cheese, grated</span></li>

<span style="font-family: Georgia, Times New Roman, serif;"><span style="background-color: white; color: #333333;">Pour beef stock into 3 qt. saucepan, add soup bones. Simmer at least 3 hours. (Drain before adding to onions) .</span><span style="background-color: white; color: #333333;">Melt the butter in a large sauce pan over medium-low heat, add the onions and cook slowly at low with the lid on until golden brown and caramelized, about 2-3 hours, stirring every 15 minutes. </span><span style="background-color: white; color: #333333;">Raise the heat to medium, uncover to reduce liquid, then add the garlic and saute until fragrant, about a minute. </span><span style="background-color: white; color: #333333;">Mix in the flour and let it cook for 2-3 minutes. ( Use less than 1/4 C). </span><span style="background-color: white; color: #333333;">Add the wine and deglaze the pan. </span><span style="background-color: white; color: #333333;">Add the strained broth, bring to a boil, then reduce the heat and simmer for 30 minutes. Add garni bag with thyme and bay leaf during last 15 minutes of cooking, then remove bag.</span></span></div>

<span style="font-family: Georgia, Times New Roman, serif;"><span style="background-color: white; color: #333333;">Ladle the soup into oven-proof bowls on a baking sheet and top with the toasted sliced bread and cheese. </span><span style="background-color: white; color: #333333;">Broil until cheese melts, about 1-3 minutes. Watch carefully to make sure cheese does not burn!</span></span></div>

This Father's Day I invited our oldest son and his family for a celebration brunch. We had two fathers, two birthday's, one college graduation, one new job, and an upcoming wedding to celebrate. I decided to make it a more elegant affair, so I pulled out my china, silver, and crystal to make the table look special. That is always a lot of work, but well worth the effort! I wanted to cook something out of the ordinary to make the occasion even more memorable. This is what I served: <br />

It was quite a meal, and got rave reviews. I am going to post most of the recipes on my blog, and wanted to start with the main course.<br />
<br />
<b>Country Ham Creamed Grits with Asparagus, Seared Scallops and Hollandaise Sauce</b><br />
<b><br /></b>
<b>Grits </b><b>Ingredients:</b><br />
1 C grits<br />
2 1/2 C chicken stock<br />
1 tsp. salt<br />
2 TBS butter<br />
1 1/2 C heavy cream<br />
1/4# country ham, chopped and lightly sauteed<br />
<b>Grits Instructions:</b><br />
Bring stock to a boil in heavy saucepan.<b> SLOWLY</b> add grits, stirring constantly. Reduce heat to low and continue to stir to keep grits from sticking. Cook grits about 20 minutes, stirring frequently, until stock is absorbed, and grits are tender. Stir in cream and ham, cook about 10 more minutes while stirring. Season to taste with salt and pepper. Keep warm until ready to serve.<br />
<b>Asparagus Instructions:</b><br />
Wash asparagus and cut off tough ends. Place on baking sheet, Salt and pepper to taste, drizzle lightly with olive oil. Bake at 400* for about 15 minutes, or till fork tender. Keep warm.<br />
<b>Blender Hollandiase Sauce Ingredients:</b> (From <u>The New Orleans Cookbook</u>)<b><br /></b><br />
1 stick butter<br />
3 large egg yolks<br />
1 TBS fresh lemon juice<br />
Scant 1/8 tsp. cayenne pepper<br />
<b>Sauce Instructions:</b><br />
Melt butter in small saucepan. Combine rest of ingredients in blender. Cover blender, and pulse to mix the ingredients lightly. Remove center section of blender lid, turn on high speed, and gradually pour in hot, melted butter in a steady stream. Cover again and switch the blender on for 60 seconds, off for 30. Repeat cycle until sauce thickens. You can put this sauce in a jar, and keep warm in a pot of hot water...do not put on burner...jus replace hot water to keep sauce warm. I have never had this sauce break, and have made it since the 1970's.<br />
<b>Seared Scallops Ingredients: </b><br />
1- 1 1/2# dry sea scallops (12 scallops)<br />
2 tsp. butter<br />
2 tsp. olive oil<br />
Kosher salt and fresh ground black pepper<br />
<b>Seared Scallops Instructions</b>:<br />
Remove side muscle, rinse in cold water and thoroughly pat dry; salt and pepper to taste. Put oil and butter in heavy saute' pan over high heat. When fat begins to smoke, carefully add scallops to keep fat from splattering. Keep scallops from touching, do not crowd pan. Sear about 2-3 minutes on each side. They should have a golden crust, and translucent in the center. <br />
<br />
Place grits on serving plate, then asparagus, Hollandiase sauce, and scallops on top..Serve immediately<br />

Summer and hot weather are almost here, and most of us are looking for delicious dishes that are quick and easy to prepare. This is one of our favorites, it comes together quickly, and is really tasty. We had it for dinner tonight. It is a simple dish, and very easy to make.<br />

<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">Ingredients:</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">3 TBS Extra Virgin Olive Oil</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">4 large cloves garlic, minced</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">8 basil leaves, chopped</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">28 oz. can <u>San Marzano</u> tomatoes, chopped</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">Salt to taste</span></span><br />
<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">1 tsp. sugar</span></span><br />

<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 15px;">Heat oil in pan over medium low heat. Add garlic, and saute until soft, be careful not to burn the garlic..this will make the dish bitter. Add chopped basil and cook about one minute. Add chopped tomatoes and salt, mix well, turn heat to medium and simmer for ten minutes. Serve over thin spaghetti or angel hair pasta. Add a salad and crispy bread...mangia!</span></span><br />

My family loves collard greens, and so do I. I have always cooked fresh bunch collards the old fashioned way, which can be a bit time consuming. My hubby wanted them for dinner one night, and I was short on time, so I decided to saute bagged, pre-chopped greens in bacon grease. Here are the simple directions.<br />
<br />
Ingredients:<br />
2# Bag Glory Chopped Collards<br />
3 TBS. Bacon Grease<br />
Salt and Pepper to Taste<br />
1 tsp. sugar<br />
Vidalia onion,chopped<br />
Pepper Sauce<br />
Peeled and quartered turnips<br />

Instructions:<br />
Soak greens in 2 tsp. baking soda for about an hour. Wash well, and remove large stems. Melt bacon grease in large pan, then add greens and seasonings. The sugar helps tone down the bitterness. Cover, and simmer slowly for about 1 1/2 hours. Keep an eye on the greens, and if the broth from the greens cooks away, add a little water. We serve ours with fresh turnips cooked on top of greens, chopped onion, and pepper sauce...the real peppers distilled in vinegar. Add turnips on top of greens during the last 20 minutes of cooking.<br />

We made an Easter basket for him, and took along some Cascarones, which he thoroughly enjoyed! (<span style="background-color: white;"><span style="color: blue;"><span style="line-height: 23.09375px;">Cascarones are a Mexican tradition for Easter as well as other holidays. A cascaron is an egg that is decorated much like an Easter egg and then filled with confetti. Cascarones are broken over the head for good luc</span><span style="line-height: 23.09375px;">k. They are used by many Texans on Holidays</span></span></span><span style="background-color: white; line-height: 23.09375px;">). </span>For dessert, I made this quick and easy Cream of Coconut Cake. Here is a picture of Peyton's slice of cake. He redesigned it, and even added some frosting to the chick's beak. My youngest son, David, had been asking me about family recipes for a few months. He is the one who made the Red Beans and Rice in an earlier post. There had been some casual talk about opening a restaurant, using family recipes to make from scratch dishes. Everyone thought naming it for his, and wife Kim's grandmothers, the inspiration and origin of many of the recipes, was a good idea. That, in a nutshell, mixed with his entrepreneurial spirit, is how Emma Ruth's Family Recipes restaurant was born. The doors opened at the end of February, and I am proud to report that the cooked from scratch, home cooking restaurant has been quite successful so far. The food is very good. If you are even in Bentonville Arkansas, stop in for a good meal, or just to say hey, y'all!<br />

I made these Chinese Spareribs for a Sunday golf watching snack. The photo didn't turn out too well, but the ribs did! They were very tasty, and every single one of them was eaten... quickly!<br />
<br />
Ingredients:<br />
2 racks pork spareribs (about 4 lbs)<br />
Marinade:<br />
1 C. ketchup<br />
1 TBS. brown sugar<br />
1/3 C chili or hoisin sauce<br />
1/4 C lite soy sauce (I find regular too salty)<br />
2 TBS dry sherry<br />
1 clove garlic, minced<br />
1/4 tsp. 5 spice seasoning (optional)<br />
1 Tsp. finely grated ginger<br />
<br />
If desired, have butcher cut rib slab in half, lengthwise. I cook mine whole. Trim ribs, and remove membrane from back of rack. Make marinade by mixing all ingredients together.<br />
<br />
Place ribs in baking dish, ( I line mine with aluminum foil for easier cleanup...trust me on this). Pour marinade evenly over ribs to coat well. Cover and refrigerate overnight. If possible, turn ribs at least once during this time. When ready to cook, uncover baking dish and roast in 375* oven for about 11/2 hours. Meat will separate from bone easily when done. <div class="MsoNoSpacing" style="background-color: white; font-family: Arial, Helvetica, sans-serif;">
<span style="font-size: xx-small;">Drain soaked beans and place them, along with all ingredients, (except sausage) in a large heavy pot. Cover with cold water. Bring to a boil over high heat, and then lower to a simmer. Cover and simmer on low for 2-3 hours. During cooking, stir frequently and scrape down sides and bottom to prevent scorching. Cook until beans are tender and creamy “gravy” forms. If mixture gets too dry and thick, add water. If too thin at end of cooking, remove lid and cook down a bit. They should have thin, creamy “gravy”, not a watery “pot-likker” like beans are usually cooked. Serve over white rice, with fried sausage, and some good baguettes and butter. Adjust seasonings to taste. Serve Tabasco on the side.</span><br />

<a href="http://stonegableblog.com/">Stonegable</a> is one of my favorite blogs! Yvonne always has beautiful photographs, and delicious recipes. Miss Yvonne has the prettiest blog in blog-land! (Thanks, Pee-Wee) She recently posted a recipe for Gazpacho using fresh garden ingredients. My sweet hubby LOVES the stuff! Our 52nd anniversary was Monday, so he took me out for a lovely meal at a local fresh seafood restaurant. I thought I would surprise him by making Gazpacho today. I adapted Yvonne's recipe to our Texas taste, and it turned out great! Next time I make it, I will add some cold seasoned shrimp to it as well. It was very, very good!<br />
<br />
Ingredients:<br />
2 1/2 C V8 juice<br />
1 C fresh tomatoes, finely chopped<br />
1/2 C celery, finely chopped<br />
1/2 C cucumber, finely chopped<br />
3/4 C red, green and yellow peppers, finely chopped<br />
1/2 C sweet onion, finely chopped<br />
3 TBS white wine vinegar<br />
1 tsp. Worcestershire sauce<br />
2 TBS olive oil<br />
3-4 drops of Tabasco sauce, or to taste<br />
2 cloves garlic, finely minced<br />
3-4 TBS fresh cilantro, finely chopped<br />
Juice of 1 1/2 lime<br />
Salt, to taste<br />
Pepper, to taste<br />
<br />
Lime Wedges for garnish<br />
1 avocado, diced for garnish<br />
Sour cream for garnish<br />
<br />
Instructions:<br />
Prepare ingredients and place in bowl with V8 juice. Put soup in refrigerator for an hour or so to chill and allow flavors to meld. Place in bowls to serve, and top with sour cream and diced avocado. If desired, add cold, seasoned boiled shrimp. Serve lime wedges on the side.<br />

My hubs loves brats on the grill, and asked me to make them for supper Saturday evening. It was still very hot when we got ready to eat, so I decided to cook them in the house. Here is a quick, easy way to do that while giving the brats a great flavor. The brats were hot..I stayed cool!<br />
<br />
Ingredients:<br />
2 bottles of beer..el cheapo<br />
Package of brats...I use Johnsonville<br />
1 large Vidalia onion, cut in strips<br />
1/2 of each: yellow, green, orange and yellow peppers, cut in strips<br />
Buns for brats<br />
1 TBS olive oil<br />
<br />
Instructions: Put brats in pot, cover with beer, and boil. Pour olive oil in grill pan. When pan is hot, add onions, peppers and brats and grill until done. Put into brat buns, top with vegetables and your favorite condiments! Easy peasy...but good!<br />

<span style="background-color: white;">There is a reason that I have been MIA for a while....I have spent the bulk of the summer doing as little as possible...I have been really lazy! As much as I enjoy cooking, my hubby and I have been </span><span style="background-color: white;">grilling</span><span style="background-color: white;">, grazing, and grabbing bites at local </span><span style="background-color: white;">restaurants</span><span style="background-color: white;">. I have to confess, I am totally into this! Even so, I decided to martyr myself last night, and cook a real dinner at home. I met some friends for lunch Saturday, and they were raving about some carrots they had eaten. I came </span><span style="background-color: white;">home</span><span style="background-color: white;"> and Googled for recipes. I found one on </span><a href="http://republicofbacon.com/2011/03/24/honey-glazed-bacon-wrapped-carrots-%E2%80%93-sophistimicated-bacon-candy/" style="background-color: white;">The Bacon Republic</a><span style="background-color: white;">, and adapted it to my taste. I served these yummy carrots with stuffed red, </span><span style="background-color: white;">yellow</span><span style="background-color: white;">, green and orange peppers with a tomato gravy, and mashed potatoes. We loved the carrots..we ate all of them! Bacon does make everything better!</span><br />

<span style="background-color: white;">Ingredients:</span><br />
<span style="background-color: white;">12 whole carrots, peeled and tops removed</span><br />
<span style="background-color: white;">12 strips bacon</span><br />
<span style="background-color: white;">3 TBS honey</span><br />
<span style="background-color: white;">3 TBS butter, melted</span><br />
<span style="background-color: white;">Salt and pepper to taste</span><br />
<span style="background-color: white;"><br /></span>
<span style="background-color: white;">Instructions:</span><br />
<span style="background-color: white;">Wash and peel carrots, remove tops. </span><span style="background-color: white;">Melt butter, mix with honey, and pour </span><span style="background-color: white;">over</span><span style="background-color: white;"> carrots. Cover carrots well with the mixture, and let sit for a few minutes. When ready to cook carrots, wrap each one in bacon, then sprinkle with salt and </span><span style="background-color: white;">pepper</span><span style="background-color: white;"> to taste. Place them on a cookie sheet lined with non-stick aluminum foil. Place in 375F oven, and bake about 20-30 minutes until carrots are tender, and bacon browned; turn when cooking.</span><br />

The handsome WWII officer on the left is my father-in-law, Colonel Edwin Nelson Dodd Sr. He was born in Georgia on July 14, 1912. He passed away at age 91, but the 100th anniversary of his birth is tomorrow. Dad was a mixture of many things, loving, strict, a raconteur of the highest order, singer, a light footed-dancer, and excellent cook. A lot of my recipes and cooking skills I learned from him. A yearly ritual was making chow-chow to serve with vegetables, on a hot dog, or even on a tomato sandwich. It was his own concoction, and is delicious. I helped him make it many times, and have made it for the family since he stopped doing it. When I do make it, all of the siblings are happy to find a box containing several jars in their mailboxes. I wanted to share this today in memory of the Colonel, and to thank him for all the culinary lessons. I love you Dad.<br />
<br />
8 C green cabbage, <span style="background-color: white;">chopped</span><br />
8 C green tomatoes, <span style="background-color: white;">chopped</span><br />
<span style="background-color: white;">2 C green bell pepper, chopped</span><br />
<span style="background-color: white;">1 C banana peppers + hot peppers to desired heat level</span><br />
<span style="background-color: white;">3 C Vidalia onion, chopped</span><br />
<span style="background-color: white;">1 C salt</span><br />
<span style="background-color: white;">Cheese cloth</span><br />
<span style="background-color: white;">Wash vegetables well and chop. Put chopped vegetables in a large pot, add salt and cover with water. Mix well, and let stand 4 hours, then drain well in cheese cloth, squeezing to remove as much liquid as possible, then return them to drained pot. All liquid should be removed at this point</span><br />

<span style="background-color: white;">3 tsp. pickling spices, tied in cheesecloth bag</span><br />
<span style="background-color: white;">3 C sugar</span><br />
<span style="background-color: white;">1/2 tsp dry mustard</span><br />
<span style="background-color: white;">1/2 tsp cayenne pepper</span><br />
<span style="background-color: white;">1/2 tsp. </span><span style="background-color: white;">turmeric</span><br />
<span style="background-color: white;">1/4 tsp. garlic powder</span><br />
<span style="background-color: white;">1 1/2 qt. white vinegar</span><br />
<span style="background-color: white;">Place bag of spices, sugar, mustard, pepper, garlic powder, turmeric and vinegar in a pot and boil for 15 minutes. Pour over vegetables, and bring to a bubble...DO NOT BOIL veggies...simmer for a minute, then put in hot, clean jars immediately and seal tight. I wash my jars in the dishwasher top rack, and let them go through drying cycle to sterilize them. You can also boil the jars and lids to sterilize them as well. I have never had any problem doing the jars like this, but use your own method if you prefer. The main purpose being getting the jars clean and sterile. The jars and chow-chow will be hot, so protect your hands from the heat.</span><br />

Hubby and I have been away from home a lot since the end of April. We just got home again...this time from a two week visit with our family members who live in Arkansas. We had a great time visiting with the children, grandchildren, and the great-grandson!<br />

I haven't had much time to post lately, but I wanted to get something up to share today. I have missed doing my blog...and my blogging friends.<br />
<br />
After we came home, I made a bee-line to our local farmer's market to buy fresh vegetables. Our deed restrictions prohibit having a garden on our property, fortunately, it is only a 10 minute drive to buy fresh produce from local Collin County, Texas blackdirt farmers. This meal is the result of my shopping trip. A Sunday night supper of Lady Peas, boiled okra, fried squash; a tomato, cucumber, Vidalia onion, red and green pepper salad dressed with oil and vinegar, and sweet iced tea with mint...from my potted herb garden.<br />
<br />
Years ago, when I moved to Minnesota, a new neighbor informed me that Southerners didn't know the difference between dinner and supper. I explained to her that we considered the main meal of the day to be dinner..no matter what time of day it was served (after breakfast, of course), and that we referred to a lighter meal in the day as lunch, and one served at night, supper. I hope that clarified it for her, bless her heart. :) Anyhow, this was our supper last night..just fresh veggies cooked southern style.<br />
<br />
Boiled okra was on the menu. A lot of people say okra is gross and slimy, but that is only when it is overcooked. I always add mine on top of fresh peas/beans during the last 8-10 minutes of cooking. Just cook okra until it is fork tender and the pods remain whole. It is delicious! <br />
<br />
It is good to be home to relax and unwind for a while. I hope all of you are having a great summer.<br />

Sunday is Father's Day, so I wanted to share my sweetie's recipe for steaks on the grill. I usually serve these with twice baked potatoes, asparagus, and a wedge salad with blue cheese dressing. They have a great flavor!<br />

Rub steaks with olive oil on both
sides. Sprinkle lightly with garlic
salt, black pepper, Cajun seasoning. Lightly coat with Worcestershire
sauce and soy sauce. Then

I know this dish is a contradiction, as shish means skewer, but that's what I am calling it anyway. I had planned shish kabobs for dinner the other night, but we had over three inches of rain.. We always welcome rain in Texas, even if it does spoil our outdoor plans. The meat for the kabobs had marinated overnight, so it had to be cooked. A small light came on in my head, and I decided to cook them inside. I really wasn't motivated to thread everything on the skewers...okay, I was too lazy to do it. Instead, I cooked the meat on my stove-top grill, sauteed the vegetables in a skillet, and added the meat to the skillet for the last few minutes. This is very simple, actually too simple to be a recipe, but it was so tasty I wanted to share it. It is a lot less time consuming too! Sweet hubby loved it!<br />

Marinate your favorite kabob meat in Good Seasons Italian Dressing overnight.<br />
Cook meat on a hot grill for about 3 minutes on each side; a little less than desired doneness.<br />
Cut 1 yellow, 1 red, 1/2 green, bell pepper and a large Vidalia onion into chunks.<br />
Heat 2TBS olive oil in skillet, and saute vegetables until they soften a bit; add the grilled meat to the pan for the last few minutes. Add about 2TBS of the Italian dressing, and cook until vegetable are the desired texture, and meat to desired doneness. Easy peasy!<br />

I don't cook fish very often, because I don't like fish that tastes like fish, and don't like the smell that goes with cooking it. My hubby loves it though, and is crazy about seared tuna. Our oldest son got home today from a deep sea fishing trip, and told us to come over to his house and pick up some Yellow-fin (Ahi) Tuna, Red Snapper, and Mahi-Mahi. He caught it yesterday in the Gulf of Mexico, out from Gulf Shores, Alabama. He brought home over 100# of fillets, so I decided to try my hand at pan seared tuna. I adapted a recipe by Tyler Florence, and it turned out well, and was very tasty. I served it with a wasabi dipping sauce, and a salad with a wasabi vinaigrette. The hubby was very excited about making this dish...so much so that he put the tuna on the grill before it was hot enough, and cooked it a bit too long! Bless his heart. The presentation is not so pretty, because he was in such a hurry to eat the tuna. In the end, none of that mattered, because it was really delicious. Despite all the drama, here it is. ;)<br />

<b>Dipping sauce:</b><br />
*Make this first to let flavors develop<br />
1/2 C water<br />
3-4 tsp wasabi paste (adjust for desired heat)<br />
1/3 C soy sauce<br />
2 TBS peanut oil<br />

Season the tuna generously with salt and pepper. Lightly oil the pan with olive oil. Lay the tuna in the pan, and sear 1 minute on each side to form a slight crust. Serve the seared tuna with the salad, sliced avocado, tomato and cucumbers and Sprinkle a small amount of the remaining cilantro over vegetables, and drizzle the wasabi vinaigrette over the whole dish. Add some pickled ginger to the plate, and serve immediately.</span></span></div>

This year, Queen Elizabeth celebrates 60 years as Monarch. The central week for the Diamond Jubilee celebration is Saturday, June 2 through Tuesday, June 5, 2012.<br />
Our good friends are here from London, so they will miss the festivities....perhaps they wanted to miss the crowds in London! They come over twice a year, and stay a couple of months at a time. Their son is a builder, and has just finished building a new home for them to live in while they are in Texas. They have spent the last few weeks moving in. We wanted to give them something unique for a housewarming gift, so I asked my sweet littlecousin (aka Gwen) to make a tea cozy for them. We selected a beautiful pattern that was especially created for the Diamond Jubilee, and I think it is lovely!<br />

The Royal crown is in the center, with the English Rose beneath. There are thistles representing Scotland, shamrocks for Northern Ireland, and daffodils for Wales.<br />

I also plan to prepare the Queen's favorite tea cake, Chocolate Biscuit Cake, for our English friends. The Queen's former chef, <a href="http://theroyalchef.com/">Darren McGrady</a>, used to prepare it for the Queen. He says it was "without a double her favorite tea cake."<br />
<br />
My friend Kitty of <a href="http://kittyskozykitchen.blogspot.com/">Kitty's Kozy Kitchen</a> has posted a lovely strawberry ice cream to go with this cake for the Diamond Jubilee. Do you think the Queen will join us for tea?<br />
<br />
Ingredients:<br />
1/2 tsp. butter, for greasing pan<br />
8 oz. McVities rich tea biscuits<br />
1/2 stick unsalted butter, softened<br />
1/2 C granulated sugar<br />
4 oz. semi sweet dark chocolate*<br />
1 egg, beaten<br />
8 oz semi sweet dark chocolate, for icing*<br />
1 oz sweetened white chocolate, for decoration<br />
*Darren does not specify what kind of chocolate, other than "dark chocolate", but I don't think unsweetened dark chocolate would fit the bill. The cake and icing would be too bitter, I think. I am going to use semi sweet dark chocolate when I make it, or perhaps <span style="font-family: Times, 'Times New Roman', serif;"><span style="background-color: white;">G</span><span style="background-color: white;">hiradelli bittersweet chocolate</span>.</span><br />
<br />
Instructions:<br />
Grease 6" x 2 1/2" cake ring with butter, and place on a parchment lined tray. Break biscuits into almond sized pieces by hand, and set aside. Cream butter and sugar in a bowl until mixture is a light lemon color.<br />
<br />
Melt 4 oz. of the chocolate in a double boiler. Add butter and sugar mixture into the chocolate, stirring constantly. Add egg and continue stirring. Fold in the biscuit pieces until they are coated with chocolate mixture.<br />
<br />
Spoon the chocolate/biscuit mixture into prepared cake ring. Try to fill all gaps on the bottom, because this will be the top when it is unmolded. Chill cake in the refrigerator for at least 3 hours. <br />
<br />
Remove cake from fridge, and let it stand while you melt 8 oz. of chocolate for the icing. Slide the ring off the cake, and turn upside down on a cooling rack. Pour the chocolate over the cake, and smooth the top and sides with a butter knife or offset spatula. Allow chocolate icing to set at room temperature. Carefully run a knife around bottom of cake where it has stuck to cooling rack, and transfer cake to a pretty serving plate. Melt the white chocolate, and drizzle on top of cake in a decorative pattern.<br />

I just subscribed to <a href="http://www.celebratemag.com/">"Celebrate"</a> magazine, was looking through the Spring issue, and saw this salad. It looked so good that I decided to make it this weekend. I adapted it to my taste, and was very happy with the result...so was my hubby! It has a great flavor, plus it makes a large amount, so it is good for big families or for a crowd. As there are just the two of us, we planned to share it with our neighbors, but ate it all ourselves over the weekend. I changed quite a few things from the original recipe. I used Calamata olives instead of black olives, because they have more flavor, and omitted the cup of garbanzo beans...because I don't like them. ;) I used the farfalle the recipe called for, but any heavy pasta could be used.<br />
<br />
Ingredients:<br />
1 box farfalle, cooked al dente<br />
1 TBS olive oil<br />
1 C Genoa Salami, cut in bite sized cubed pieces<br />
1 C Provolone cheese, cut in bite sized cubed pieces<br />
1 roasted red bell pepper, cut in bite sized cubed pieces<br />
1 roasted yellow bell pepper, cut in bite sized cubed pieces<br />
2 C grape tomatoes, halved<br />
2/3 C Calamata olives, halved<br />
2 jars marinated artichoke hearts, drained and halved<br />
1/2 C fresh basil, cut in thin strips<br />
1/2 C Vidalia onion, cut in bite sized cubed pieces<br />
1/2 C Good Seasons Italian dressing, prepared per package instructions<br />
1/4 C red wine vinegar<br />
1 large clove garlic, squeezed through garlic press<br />
Salt and pepper to taste<br />

Cook pasta per instructions on box for al dente; drain, then mix with 1 TBS olive oil to coat pasta well. Roast peppers under broiler, and remove peeling. When pasta and peppers have cooled, combine pasta, Salami, cheese, peppers, tomatoes, artichoke hearts, tomatoes, olives, basil and onions in a large bowl. Prepare dressing per package directions, add garlic and mix well. Egg salad sandwiches...simple, easy, and very tasty. These days cooks want to fancy them up a bit, but I make mine the old fashioned Southern way, just like my Grandmother did. When Bobby and I were dating in the late 50's, I used to make them for him...to his delight! He had invited me out for lunch today, after his morning golf round. He came home expecting me to be gussied up, and ready to go out. Instead, I surprised him with egg salad sandwiches and sweet iced tea for lunch. Needless to say, he was very happy. This recipe is almost to simple to post, but I am going to do it anyway. ;) I hope all my lovely blogging friends have a great Memorial Day!<br />

Ingredients:<br />
4 hard boiled eggs<br />
(For perfect boiled eggs, put eggs in cold water, bring to a full boil, and cook for 5 minutes. Turn the burner off, and let eggs sit in hot water for 10 minutes. When cool, crack at the large end, and peel)<br />
2 TBS sweet pickle relish<br />
2 TBS mayonnaise<br />
Salt to taste (I never use black pepper in my egg salad)<br />
Soft white bread<br />

Instructions:<br />
Chop boiled and peeled eggs, add relish, mayo and salt; mix well. Spread a little mayo on each side of bread, add egg salad and serve.<br />

Okay, I know you all of you are saying. "beef tips with egg noodles; big deal"...but I am saying right here and now that this is a good dish. YEARS ago I used to make a roast with dry onion soup mix, and canned mushroom soup. (I heard that "so what, been there done that".) I'm still saying this is a good dish...especially on a busy day. Our ironing service didn't work out, so after doing the Monday wash day thing yesterday...there was a lot of ironing to be done today. Did I mention I HATE to iron. My sweet, wonderful hubby has been doing the ironing, but there was a LOT today, so instead of our usual Tuesday "date day" lunch out, I made lunch at home, and the two of us had an ironing party on our screened porch! It was beautiful day, and it made ironing seem less punitive doing it there. Well, to make a long story even longer, I had planned to make beef stew for dinner, and let it simmer most of the day, but I didn't have any carrots. Being quick witted...for an old chick..I thought of making this instead. It made a delicious dinner. I served it with a simple salad of lettuce. fresh tomatoes, Vidalia onion, and plain old French dressing..yes, the orange stuff. Sweet iced tea with lemon and mint from my herb garden topped it off. Good little supper, if I do say so myself. :)<br />
<br />
Ingredients:<br />
2# marbled stew meat, cubed<br />
1 can cream of mushroom soup<br />
1 envelope of dried onion soup ( I use about 2/3 of it because it tends to overpower the dish)<br />
20 oz. beef stock<br />
2 TBS cooking oil<br />
Black pepper<br />
Egg noodles, prepared according to package directions and drained<br />

Instructions:<br />
Put oil in pot; when hot. add beef, season with black pepper, and brown lightly. I do not add salt, and the onion soup mix tends to be salty. Add soups and stock, and stir to make smooth gravy. Turn burner to low, and simmer for several hours, or cook in Crockpot. I simmered mine 4-5 hours, and it was melt in your mouth tender. Serve over noodles, or rice.<br />

Today, my dear friend and blogging buddy, Kitty, of <span style="color: red;"><a href="http://kittyskozykitchen.blogspot.com/">Kitty's Kozy Kitchen</a> </span>attended a cooking class and "Royal Mother's Day Tea Party" conducted by Chef Darren McGrady, The Royal Chef He was chef to Queen Elizabeth II, and private chef to Princess Diana. His bio on his website, Darren McGrady, <a href="http://theroyalchef.com/">The Royal Chef</a>, gives the following information about him: <span style="color: #333333; font-family: Arial, Helvetica, sans-serif; font-size: 14px; line-height: 24px; text-align: left;">Darren was personal chef to Queen Elizabeth II, Diana, Princess of Wales and Princes’ William and Harry for fifteen years and has cooked for Presidents’ Ford, Reagan, Bush, Clinton and Bush. He is now a chef, author, culinary consultant, event planner and public speaker living in Dallas, Texas. His first cookbook titled ‘Eating Royally; recipes and remembrances from a palace kitchen’ is now in sixth print with all of his advance and royalties donated to the Elizabeth Glaser Pediatric Aids Foundation.</span><br />

He prepared a high tea with: English Cheddar and Branston Pickle Sandwiches; English Cucumber and Mint Cream Cheese Sandwiches; Parma Ham, Rocket and Mozzarella Sandwiches; Curried Shrimp Deviled Eggs; Smoked Salmon and Dill Quiche; Rose Macaroons; Lavender Shortbread with Honey; Chocolate Torte; and Orange and Green Tea Loaf Cake with Clotted Cream Frosting. This was accompanied by tea, of course, and three champagnes. The food was delicious, the chef was charming, and he shared stories about the Royals, and his recipes as well.<br />

I haven't eaten curry very often, so I am always a bit leery of dishes that have it as ingredient, fearing that it will be too strong or spicy. All of the food today was wonderful, but oddly enough, the Curried Shrimp Deviled Eggs were my absolute favorite. Kitty and I spoke with the chef after the tea, and bought a copy of his cookbook "Eating Royally". He gave his permission for us to share his recipes on our blogs, so here is the recipe for the eggs. Give them a try!<br />

<br />
<b> Curried Shrimp Deviled Eggs</b><br />
Ingredients:<br />
6 hard boiled eggs-cut in half, remove yolks<br />
8oz. raw shrimp, chopped into small chunks<br />
1/2 TBS Madras curry powder<br />
1 TBS olive oil<br />
2 TBS chopped fresh chives<br />
5 TBS mayo<br />
5 TBS (he said to use less for deviled eggs)<br />
1TBS mango chutney<br />
1/2 tsp. salt<br />
2 TBS water<br />
<br />
Directions:<br />
In a small non-stick saute' pan, add olive oil on medium-high heat; add curry powder; stir. As soon as it sizzles, add the chopped shrimp and salt; saute for a few minutes until shrimp turns pink. Remove from heat, and let cool. Combine the mayo and sour cream;<b> Remove 3 TBS of the mixture to a separate bowl and add almost 3TBS water.</b> It should be pourable, the consistency of cream. Mash up all but three of the yolks and add to shrimp. Add mayo mixture, chives and mango chutney, stir thoroughly to combine. Taste to adjust seasonings. Chill in refrigerator until ready to use. To finish preparation, divide filling among the egg whites, topping to the brim. Drizzle thinned mayo mixture over the eggs. Place the three remaining egg yolks in a strainer; push yolks through strainer with your fingers to make a "dust". Sprinkle over plated eggs and serve.<br />

I made this cake Saturday, because our niece Hilary came to visit. That girl does love to come to Auntie Pattycakes and Uncle Bobby's house...and eat the goodies made especially for her. ;) I love recipes like this that are quick and easy to make, but are delicious as well. Hilary did enjoy this cake, and took some for the road. I have seen many versions, and names, for this cake. I have always called it Pig Pickin' Cake, and this is how I make it. It really is tasty!<br />
<br />
Ingredients:<br />
1 box yellow cake mix (18.25 oz.)<br />
3 large eggs<br />
1/2 C vegetable oil<br />
1 11oz. can Mandarin oranges, with juice<br />
Mix all ingredients until well blended and smooth. Pour into 9x13 pan that has been prepared with oil/flour baking spray, like Pam. Bake at 350F for 35-45 minutes. Let cake cool before frosting.<br />

Frosting:<br />
1 8oz. carton Cool Whip, thawed<br />
1 20oz. can crushed pineapple, juice reserved<br />
1 3 1/2 oz. box <b><u>instant </u></b>vanilla pudding<br />
Mix all ingredients until well blended, if frosting is too thick, add a little of the reserved pineapple juice. Spread over cooled cake, and refrigerate until ready to serve. This cake is even tastier the second day...if you have any left!<br />

Hubby and I used to go to the Kentucky Derby every year. What a special and fun event it is! I always looked forward to seeing beautiful Churchill Downs, and the magnificent horses! I loved buying dresses and HATS to wear to the events! We used to stay at the Seelbach Hotel downtown, an old Louisville hotel that has been renovated. Derby Pie was served everywhere you went. This recipe is from the Junior League of Owensboro, Kentucky cookbook. Enjoy Derby Day, and good luck if you have picked a favorite horse to win the special event!<br />

Ingredients:<br />
1 unbaked 9" pie shell<br />
6 TBS sugar<br />
2 TBS brown sugar<br />
1/2 TBS flour<br />
1/2 C butter<br />
2 eggs<br />
1/2 tsp vanilla<br />

1/2 C chocolate chips<br />
1/2 C Pecans<br />

I have not been posting for almost a month, because of family issues. My sweet hubby and I both are very tired, stressed, and have been spending a lot of quiet time by ourselves until we can fully recover. Hopefully, we have found a resolution, and one that is good for us and our entire family, especially son Michael.<br />

I have missed blogging, and my blog friends. I decided today to start out with something simple...a real Southern treat that I have loved all of my life. It is not a recipe, but just me sharing one of my favorite things!<br />
<br />
Our very first tomato of the season was ripe when I went out this morning...so I picked it, and made my myself...and hubby, a "mater sammich"....better known as a tomato sandwich. Here's what you need:<br />
<br />
2 slices of soft, white "store bread"<br />
Duke's mayonnaise<br />
Salt (I am a purist, and do not use pepper. but I give you permission to do so ;) )<br />
1 red, ripe, juicy, delicious, homegrown tomato, sliced.<br />
<br />
Just slather the mayo on the bread, add the tomato slices, and add your salt...and pepper, if you insist. Enjoy<br />
