Cheese Straws

I was browsing my cookbook collection this morning, and ran across my copy of "Charleston Receipts", published in 1950.  It has been much revered by Southern ladies who cook, for generations.  When I was a young homemaker, and attended a ladies luncheon, shower, or tea, cheese straws were ALWAYS on the menu.  They bring back many pleasant memories for me, so I decided to share this recipe with my blog friends!  I hope you will give them a try!  Enjoy, y'all!

Ingredients:
1# sharp cheddar cheese, grated
1 3/4 C plain flour
1/4# butter, creamed
1/2 tsp. salt
1/4 tsp. red pepper (cayenne)

Instructions:
Cream butter, add cheese, salt and peppers, then flour.  Put in cookie press or roll thin and cut in narrow strips 4" long.  Bake at 350F for 25 minutes, or until light brown.  Makes about 100. (Southern ladies entertained a lot in the 50's!)

  4. I have only tasted commercial cheese straws, I am sure homemade ones melt in your mouth! I can easily see myself plowing through 100 of these. I had better make halfthe recipe :-) xo

  6. Yes, cheese straws have been served at every shower, ladies luncheon, and wedding I have ever attended! There was once a bakery nearby that made the best I have ever eaten!! They are delicious to me!!

  12. Girl, we STILL expect cheese straws at every wedding shower or cocktail-type reception in the South. I usually cheat and buy them at a bakery but with your recipe looking so easy, I may try to make my own.

  20. What wonderful memories these bring back...My mom was a catering in her younger days, and I would help out at weddings...These were my favorite, and the sausage balls weren't bad either.     I think my last comment my not have made it through. I am so happy to get this older recipe, some of the newer ones don't have the flavor that this one has.
